When a child is diagnosed with eosinophilic esophagitis, caregivers always have many questions and one issue that causes a great deal of anxiety and stress is finding what the child can eat. As a general rule, most children with EoE are put on restrictive diets due to the fact that food allergies are the main contributor of EoE symptoms. As foods are eliminated from a child’s diet, families are faced with the daunting task of having to learn how to prepare foods using alternate ingredients that still provide children with the nutrients they need to grow and thrive.
